Ingredients

  • 1 large brinjal, cut into thick slices
  • 1 tbsp red chilli powder
  • 12 tbsp thick yogurt
  • 1 chopped onion
  • 1/4 tsp grated ginger
  • 2 chopped green chillies
  • 3 tbsp Kissan Fresh Tomato Ketchup
  • 1/2 cup yogurt
  • Garam masala to taste
  • A few chopped coriander leaves
  • Salt to taste

Directions

  • Place the brinjal slices in a colander. Sprinkle salt and chilli powder on both sides of the slices, and leave to drain for at least 10 minutes.

  • Meanwhile, place the yogurt in a strainer set over a bowl to drain.

  • Heat the oil in a non-stick pan and fry the brinjal slices till soft. Remove and drain on absorbent paper.

  • Heat a little more oil in the same pan; add the chopped onion, ginger, green chillies and Kissan Fresh Tomato Ketchup and cook for 2 minutes. Remove from heat.

  • Arrange the brinjal slices in a plate; spread the onion mixture on top, followed by the drained yogurt. Sprinkle with coriander leaves.
