Ingredients
- 1 large brinjal, cut into thick slices
- 1 tbsp red chilli powder
- 12 tbsp thick yogurt
- 1 chopped onion
- 1/4 tsp grated ginger
- 2 chopped green chillies
- 3 tbsp Kissan Fresh Tomato Ketchup
- 1/2 cup yogurt
- Garam masala to taste
- A few chopped coriander leaves
- Salt to taste
Directions

Place the brinjal slices in a colander. Sprinkle salt and chilli powder on both sides of the slices, and leave to drain for at least 10 minutes.

Meanwhile, place the yogurt in a strainer set over a bowl to drain.

Heat the oil in a non-stick pan and fry the brinjal slices till soft. Remove and drain on absorbent paper.

Heat a little more oil in the same pan; add the chopped onion, ginger, green chillies and Kissan Fresh Tomato Ketchup and cook for 2 minutes. Remove from heat.

Arrange the brinjal slices in a plate; spread the onion mixture on top, followed by the drained yogurt. Sprinkle with coriander leaves.
